Beef and Sun Dried Tomatoes

Greetings all,
I don't have the instructions for this recipe, so I'm making up what I think they would be... so basically, if it doesn't come out quite right, that's not on Grammy (it's on me).

Beef and Sun Dried Tomatoes
2lbs beef, cubed
2 med onions, sliced
garlic
1 TB flour
1 1/3 cup water
2 cup beef broth
2 1/2 oz sun dried tomatoes, sliced
1 TB brown sugar
1 TB worcestershire sauce

-Brown beef in pan, remove.
-Saute onion and garlic in pan. When browned add 1 cup of water.
-Mix remaining water with flour to make thickener. Add to pan.
-Add broth, tomatoes, sugar and worcestershire sauce. Bring to boil, then simmer until sauce thickens.

Super Christmas Brunch!

Happy Holidays, everyone.
Since next weekend will be spent with family, this will be the last post before Christmas -- but we're making it a big one! If you're still planning your menu for Christmas, perhaps this can serve as a guide. We unfortunately only have the page for two of the items listed (though orange and pear slices, and coffee hardly require a recipe).

From the Treat family to yours, have a very Merry Christmas!

Super Christmas Brunch

Suggested Menu:

  • Fresh Orange and Pear Slices
  • Marmalade-Glazed Baked Ham
  • Beignets with Cinnamon-Maple Syrup
  • Custard Corn Pudding
  • Coffee & Milk
Marmalade-Glazed Baked Ham
1 ham (5lb)
1/2 10 oz jar orange marmalade
2 TB brown sugar
1 TB ketchup
1 TB soy sauce
1/2 ts garlic salt
1/8 ts pepper

-place ham in 13" by 9" baking dish, insert meat thermometer.
-bake at 325 degrees for 1 hour.
-mix marmalade with remaining ingredients, and brush over ham.
-bake an additional 15 minutes, or until the thermometer reads 140 degrees.

3 cups milk
3 TB butter
5 eggs
2 1/4 ts salt
2 ts sugar
1/4 ts pepper
17 oz corn, drained
parsley sprigs for garnish

-In a separate casserole dish, whisk in eggs, salt, sugar and pepper, then stir in corn.
-Slowly pour the hot milk over the corn mixture, and continue stirring.

Roast Turkey

Thanksgiving was Grammy Gertie's main event - a house full of family, kids running up and down the hall poking at the cooling pies. She used to serve a Thanksgiving feast for 15-20, with more food than any of us could handle. It was always a great time.

Happy Thanksgiving to you and yours!

Roast Turkey
(this recipe calls for roasting the turkey on its side and then flipping it halfway... we're not endorsing that)

-Stuff, truss and place the turkey on rack in roasting pan.
-Brush with butter.
-Roast at 325, length of time depends on weight:
8-10 lb turkey = 20-25 min per pound
10-14 lb turkey = 18-20 min per pound
14-18 lb turkey = 15-18 min per pound
18-20 lb turkey = 13-15 min per pound

Sheila's Chicken Casserole

This is a recipe that Grammy Gertie got from one of her friends at the Red Cross. For a chicken casserole, it has quite a bit of non-chicken meat in it... perhaps this was the inspiration for the Turducken.

Sheila's Chicken Casserole

5 1/2 oz dried beef
chicken breasts
bacon, enough strips to cover
1 can cream of mushroom soup
1 cup sour cream

-Rinse dried beef in cold water, drain, and then spread on bottom of baking dish
-Layer chicken breasts on top of beef, then top with slices of bacon
-Bake at 350 degrees for 30 minutes
-Mix cream of mushroom with sour cream, then pour over the meat
-Bake an additional 30 minutes

Barbecued Spare Ribs

Because I had these for dinner the other night... and because they always make me think of this SNL skit of Will Ferrell as Harry Caray. "What if it were made of barbecued spare ribs... would you eat it then?"

2 lbs spare ribs
1 medium onion
2 TB oil
1/4 cup lemon juice
2 TB vinegar
1 TB Worcestershire sauce
2 TB brown sugar
1/2 cup water
1 cup chili sauce
salt and pepper

-Bake ribs in 350 degree oven for 1 and 1/2 hr.
-Chop onion and combine ingredients into a marinade. Add ribs and let rest for at least 1 hr, preferred overnight.
-Place ribs on grill for 30 minutes.

Jean's Hot Chicken Salad

Just as we thought it was finally warming up, it decided to snow again today. It makes you want to come home, eat/drink something warm, and curl up in bed.

In that spirit, we present this unexpectedly warm recipe. Note that it includes several things you would usually find on Grammy Gertie's lunch table, including the Hellman's and potato chips.

1/4 cup almonds, slivered
pinch of salt
2 tsp onions, finely chopped
1 cup Hellmann's

Kit's Hamburg Stroganoff

Here's another recipe from my Aunt Kit. If it seems like I've been posting a lot of hot recipes recently, the 2 feet of snow outside my window might have something to do with that.

1/4 cup onion, chopped
1 clove garlic, chopped
mushrooms, sliced
1 cup sour cream

-Simmer onion and garlic together in fry pan.

Chicken Broccoli

2 pkgs broccoli, cooked
2 cups cooked chicken
1 cup American cheese, grated
1 can Cream of Chicken soup
rice, cooked

Roast Beef with Yorkshire Pudding

(Double click on the image to enlarge)

It's starting to get cold again, so we're posting something hearty. Double click the recipe's image to enlarge it -- though the jist of it is roast 6-7 lbs of beef at 325 for 2 1/2 hours... a meat thermometer would be a big help.

Molded Tuna Ring

File this one under "Names that make you go Huh?"... the more I read, the more this recipe sounds disgusting... creative, but disgusting. It's basically a tuna fish Jello mold. So 1960s!

Molded Tuna Ring

2 cans tuna
2 hard boiled eggs, peeled and chopped
1/2 cup chopped stuffed olives
1/2 cup chopped celery
1 TB unflavored gelatin
1/4 cold water
1 cup mayonnaise
1 cup sour cream "(optional) I didn't."
1 TB minced onion
1/2 ts salt
1/4 cup lemon juice
2 TB finely minced parsley

-Drain tuna and flake it. Combine with eggs, olives and celery.
-Soften gelatin in cold water for 5 min, then heat it until it dissolves. Stir in mayonnaise, sour cream, onion , salt, lemon juice, and parsley.
-Combine tuna mix with gelatin mix.
-"Pile into 1 qt mold or six individual molds and chill until firm. Serve with greens and dressing."

If you look at the recipe, there are notes at the bottom, and a recipe for a cucumber dressing that even Grammy wasn't so sure about.

Cucumber dressing

1 cup cucumber, shredded
1/2 cup sour cream
1 ts minced onion
2 ts lemon juice
s&p to taste

-Combine ingredients, chill and serve.
