Scotch Scones

There were hundreds of recipes in Grammy's cookbook from the 1940s, but I only copied the ones that were well worn.

I'm assuming you can add raisins, blueberries or whatever you like (chocolate) to this recipe.

Scotch Scones

2 cups flour
2 TB sugar
3 ts baking powder
1/2 ts salt

1/4 cup shortening
1 egg yolk
1/3 cup light cream
1 egg white

-Sift together dry ingredients.
-Cut in shortening into dry mixture with 2 knives.
-Beat egg yolk, mix with cream, and add to dry ingredients.
-Roll out dough to 1/2" thick. Cut into triangles and place on baking sheet.
-Beat egg white, brush on triangles. Sprinkle with sugar.
-Bake at 450 degrees for 15 minutes.

Quiche Lorraine

Happy Monday everyone,
Grammy's recipe collection includes this one for Quiche Lorraine. Though the recipe itself has instructions for how to make the pie crust, I'm going to leave that part out. You can double click on the recipe if you really want to know... but remember, Grammy used to occasionally cheat with store bought pie crust :)

Quiche Lorraine

6 slices bacon, cooked and crumbled
1 cup Swiss cheese, shredded
3 lg eggs
1 TB flour
1/2 ts salt
1/8 ts nutmeg
2 cups milk
1 TB butter or margarine

-Preheat oven to 425.
-Roll pie crust/pastry into 11" circle. Fit into 9" pie plate, fill with weights, and bake for 12 minutes.
-Reduce oven temp to 375.
-Sprinkle bacon and cheese evenly on pastry shell.
-Whisk eggs together with flour, salt, nutmeg and milk. Pour into crust.
-Melt butter in saucepan until browned, and drizzle over top.
-Bake 30-35 minutes.

Quiche Lorraine

Everyone's grandmother seems to have a variation of this recipe. Here's Grammy Gertie's:

Quiche Lorraine

1 9"pie crust
2 pieces bacon, cooked and crumbled
1 spanish onion, diced and sauteed
1 1/2 cup grated American cheese
3/4 cup Romano cheese
2 eggs
1 1/2 cans evaporated milk
dash of cinnamon

-Mix all of the above ingredients and pour into pie crust.
-Bake at 350 degrees for about 20 minutes until set.

Johnny Cake

A johnny cake is a bit like a cornbread pancake. I remember going to visit Grammy's house, and having the store bought ones for breakfast.

Johnny Cake

2 cups corn meal
1 cup flour
2 cups milk
2 eggs
1 tsp salt
3 tsp baking powder
2 TB shortening (or swap for butter)

-Mix all ingredients as you would pancake mix
- Scoop onto greased baking sheet. Bake at 400 degrees for 30 min

Other recipes indicate you could cook these like pancakes on a griddle if you prefer.

Caramel Pecan Sticky Buns

These look delicious!

Caramel-Pecan Sticky Buns

1 pkg active dry yeast
3/4 cup warm water
3/4 cup warm milk
1/4 cup sugar
3 TB vegetable oil
2 ts salt
4 cups all purpose flour (give or take 1/4 cup)

- Dissolve yeast in warm water. Add milk, sugar, oil, salt and 1 1/4 cup flour. Beat on medium until smooth (2-3 min).
- Stir in remaining flour to form soft dough. Knead until smooth and elastic (6-8 min).
-Place dough in greased bowl, flipping once to grease top.
-Cover and let rise in a warm place until doubled in size (1 hr).

FILLING:
1/4 cup butter
1/4 cup sugar
3 ts ground cinnamon
3/4 cup brown sugar, packed
1/2 cup whipping cream
1 cup coarsely chopped pecans

-When dough is ready, roll out flat on lightly floured surface.
-Butter the dough within 1/2 inch of edges.
-Combine sugar and cinnamon and sprinkle over butter.
-Roll up the dough like a jelly roll. Pinch edge to seal. Cut into 12 slices.
-Combine brown sugar and cream, pour onto a greased baking tray. Sprinkle pecans on top.
-Place rolls over pecans. Cover and let rise until doubled in size (1hr).
-Bake at 350 degrees for 30-35 minutes.
-Let the buns cool. Flip upside down to serve.
