Happy Hannukah!


Mazel Tov, dummies!
(30 Rock reference, has nothing to do with this blog, or the holiday. Just sounds funny.)

Tonight is the first night of Hannukah. Though this recipe isn't exactly traditional Jewish cooking, it's as close as we're gonna get.

A quick Google search on Jewish Apple Cake turned up that it has its own Wikipedia page. Kinda interesting, if you're into food history.

Jewish Apple Cake
 4 apples, pared and sliced
2 tsp cinnamon
3 cups flour
1 1/2 cups sugar
2 1/2 tsp vanilla
1 cup oil
3 tsp baking powder
4 eggs
1/4 cup orange juice

-Pare and slice the apples. Mix with the cinnamon and 4 TB of the sugar. Set aside.
-Beat together remaining ingredients until smooth.
-Grease a 10" tube pan. Alternate layers of batter and apples 3 times.
-Bake 1hr 15 min at 350 degrees.

Apple Bread

The apples are coming into season in Massachusetts, so it's a great time to play around with some of Grammy Gertie's apple recipes. Click here to see more apple recipes.

Apple Bread

2 cups flour, sifted
1 ts baking powder
1 ts salt
1 ts baking soda
1 ts cinnamon
1/2 ts nutmeg
1/2 cup mayonnaise
3/4 cup of sugar
1 ts vanilla
2 eggs, room temperature
1 cup applesauce
2 cups apples, peeled and chopped

-Mix all dry ingredients together (flour, baking powder, salt, paking soda, cinnamon, nutmeg)
-Mix all wet ingredients together (mayo, sugar, vanilla, eggs, applesauce, apple)
-Mix the 2 mixes, and pour into a greased bread pan
-Bake at 350 degrees for 1 hour.

Countdown to Thanksgiving

We're beginning the Thanksgiving season with a well-worn page from Grammy's cookbook.

Two tips that Grammy would like to pass along, to make your pie even better:
1) Use 2 different varieties of apples for better flavor.
2) There is no shame in using the premade pie crust.


APPLE PIE
Pie crust
6 tart apples, cored and sliced
2 ts flour
1 cup sugar
1 ts lemon juice
1/2 ts cinnamon
1/4 ts nutmeg
2 TB butter

-Sprinkle flour over bottom of pie plate, place crust over and sprinkle with 1/4 cup sugar.
-Arrange apples on pie crust and sprinkle with lemon juice.
-Mix remaining sugar, cinnamon and nutmeg; sprinkle over apples.
-Dot with butter; cover with top pie crust.
-Bake at 425 degrees for 40 - 50 minutes.

Mumford & Sons and Applesauce Cake

Technology Oops.

In attempting to upload this recipe, I accidently dragged it into my iTunes. It now appears as the album art for "White Blank Page" by Mumford & Sons... oh well.


I'd like to think that band enjoys a good applesauce cake.

Betty Crocker Applesauce Cake

2 1/2 cups flour
2 cups sugar
1/4 ts baking powder
1 1/2 ts baking soda
1 1/2 ts salt
3/4 ts cinnamon
1/2 ts cloves
1/2 ts allspice
1/2 cup shortening/butter
1/2 cup water
1 cup raisins, chopped
1 1/2 cup applesauce
1 large egg

-Mix all dry ingredients.
-Beat together butter, water, raisins and applesauce.
-Beat in egg.
-Add dry and wet mixes, and stir.
-Bake in 9" x 13" pan for 45-60 minutes at 350 degrees.

Nobby Apple Cake

Happy Friday, everyone!

From the kitchen of Edna Hall, we have a dessert recipe for you today.

Nobby Apple Cake

1 cup sugar
3 TB oleo/butter
1 egg
3 cups apple, diced
1/4 cup nuts
1 tsp vanilla
1/2 tsp nutmeg
1/2 tsp cinnamon
1/2 tsp salt
1 tsp baking soda
1 cup flour

-Cream oleo/butterr with sugar, add beaten egg and mix well.
-Add diced apples, nuts and vanilla.
-Add sifted dry ingredients.
-Bake at 350 degrees for 40 to 45 minutes.

Spiced Streusel Apple Pie

Happy Monday, let's make a pie!

Spiced Streusel Apple Pie

Topping:
2/3 cup walnuts
1/2 cup brown sugar
1/4 cup cornmeal
1/4 cup flour
3/4 tsp cinnamon
1/2 tsp nutmeg
5 TB butter

Pie:
6 apples, cut up (and peeled)
1/2 cup sour cream
1/4 cup sugar
2 TB flour
1 1/2 tsp cinnamon
3/4 tsp nutmeg
1/4 tsp cloves

- Put the apples in a pie shell, with other "pie" ingredients
- Top with "topping" ingredients
- Bake for 45 min at 425 degrees. **Cover with tin foil for the final 25 minutes**

Grammy Gertie's Apple Crisp Recipe

This card was written in pencil, and has since faded. Here's what it says:


Apple Crisp
6 servings

Grease 2 qt casserole or custard cups -- put in 3 pared and sliced (1 can) tart apples.

Mix with a fork and cover apples with:
1 cup flour
3/4 cup sugar
1 unbeaten egg
3/4 ts salt
1/3 cup shortening
sprinkle cinnamon over top

Bake 30-40 min at 350 degrees
