This is a recipe that Grammy Gertie got from one of her friends at the Red Cross. For a chicken casserole, it has quite a bit of non-chicken meat in it... perhaps this was the inspiration for the Turducken.
Sheila's Chicken Casserole
5 1/2 oz dried beef
chicken breasts
bacon, enough strips to cover
1 can cream of mushroom soup
1 cup sour cream
-Rinse dried beef in cold water, drain, and then spread on bottom of baking dish
-Layer chicken breasts on top of beef, then top with slices of bacon
-Bake at 350 degrees for 30 minutes
-Mix cream of mushroom with sour cream, then pour over the meat
-Bake an additional 30 minutes

Jean's Hot Chicken Salad
Just as we thought it was finally warming up, it decided to snow again today. It makes you want to come home, eat/drink something warm, and curl up in bed.In that spirit, we present this unexpectedly warm recipe. Note that it includes several things you would usually find on Grammy Gertie's lunch table, including the Hellman's and potato chips.
Jean's Hot Chicken Salad
2 cups chicken, cooked and diced
1 cup celery, chopped

1/4 cup almonds, slivered
pinch of salt
2 tsp onions, finely chopped
1 cup Hellmann's
2 TB lemon juice
-Mix all of the above ingredients together.
-Put into a baking dish, and top with:
1/3 cups grated cheddar cheese
crumpled potato chips on top
-Bake at 30 minutes for 350 degrees.
-Recommended serving, pour baked chicken salad over Chinese noodles

Spinach Casserole
I'm pretty hungry as I type this recipe in... and it's sounding pretty good right now.Spinach Casserole from Pat Peterson
2 pkgs frozen chopped spinach, cooked & drained
1 cup Pepperidge Farm stuffing mix
1/4 cup margarine
1/2 pkg Lipton onion soup mix
1 cup sour cream
-Melt margarine, and mix with stuffing.
-Add other ingredients and mix.
-Put mix into casserole dish and back at 350 degrees for 20 mins.

French Onion Casserole
This recipe is an interesting rearrangement of French Onion Soup. If and when I try to make it, I'll post some photos.French Onion Casserole
4 med onions, sliced
3 TB oleo / butter
2 TB flour

dash of pepper
3/4 cup beef bouillon
1/4 cup dry sherry
1 1/2 cup croutons
2 TB oleo / butter, melted
1/2 swiss cheese, shredded
3 TB parmesan cheese
- Cook onions in the 3 TB oleo/butter until tender.
- Mix in flour and pepper.
- Add bouillon and sherry, and cook until thickened and bubbly.
- Pour into 1 qt casserole dish.
- Toss croutons with 2 TB oleo / butter and put on top of onion mixture.
- Sprinkle with swiss and parmesan cheese.
- Place under broiler until cheese melts, about 1 minute.
- Serve hot, serves 4-6 people

New Year's Eve Edna's Seafood Casserole
For anyone throwing a New Year's party tonight, here's a recipe that Grammy has designated for the holiday. I especially like the use of crushed potato chips as a topping! Yes! My inner five year old says: Best casserole ever!Edna's Seafood Casserole
1lb crab and lobster meat
1 lb cooked shrimp
1 cup mayonaise
1/2 cup green pepper, chopped
1/4 cup onion, minced
1 1/2 cup chopped celery
1/2 ts salt
1 TB worcestershire sauce
2 cups potato chips, crushed
paprika
- Mix ingredients except chips and paprika, and pour into casserole dish.
- Top with paprika, then with chips.
- Bake at 400 for 20-25 minutes.

Yankee Noodle Bake
This is one of those recipes that appeared on a package of Campbell's Soup. Very nostalgic!Yankee Noodle Bake
4 hot dogs, sliced
1/4 cup chopped onion
2 TB butter
2 cups cooked med. noodles
1 can (10.5 oz) tomato soup
1/2 cup water
1 tsp mustard
1/4 cup bread crumbs
- Brown hot dogs and onion in butter until tender.
- Combine with noodles, soup, water and mustard in 1/2 quart casserole.
- Top with bread crumbs.
- Bake at 350 degrees for 30 minutes.

Muriel's Dinner-In-A-Dish
No idea what magazine this came from, and no idea who Muriel might be... but this recipe reached recipe box card status. Let's give it a go:Muriel's Dinner-In-A-Dish
6 TB butter
1 med onion, sliced
2 green peppers, sliced thin
1 lb ground beef
1 1/2 ts salt
1/4 ts black pepper
2 eggs, beaten
2 cups corn
4 med tomatoes, sliced
1/2 cup bread crumbs
-Melt 4TB butter in a skillet, saute the onion and green peppers for 5 min.
-Add beef, s&p, and cook on high heat for 3 minutes.
-Remove from heat for 5 min, then mix in eggs.
-In casserole dish, spread 1 cup corn, layer with half the meat mixture, then half the tomatoes.
-Repeat layers of corn, meat, tomatoes.
-Cover with bread crumbs and dot with 2 TB butter.
-Bake at 375 for 1 hour.

Edna's Chicken
"Edna's Chicken - Delicious + pretty"Large macaroni shells, cooked
2 cups chopped chicken
Chicken broth
1/4 cup celery
1 small onion
1/2 cup bread, chopped fine
1 egg
1/2 tsp Rosemary
1/4 tsp salt + pepper
1 can condensed cream of chicken soup
1/3 cup milk

-mix chicken, celery, onion, bread crumbs, egg and spices.
-add 2 TB of the soup. Stir well in baking dish.
-mix in shells, pour remainder of soup and broth on top.
-bake at 350 degrees for 30 min.
-garnish with chopped fresh parsley.
