Party Cranberry Salad

Grammy Gertie has several recipes for cranberry Jello salads. And here's another!


Party Cranberry Salad

1 3oz package of red fruit Jello
1 cup boiling water
1 cup pineapple juice
1 1/2 cup ground fresh cranberries
3/4 cup diced celery
1/2 cup pecans or walnuts, chopped

- Add boiling water to Jello packet, mix in other ingredients.
- Pour into mold, chill for 4 hours.
-Serve on lettuce leaf and garnish with a spoon of salad dressing.

Cranberry Jello Mold

It's almost Independence Day over here in the States...

If you're celebrating the 4th of July this weekend, the one thing your patriotic barbecue absolutely needs is a dish that is flaming red and deliciously chilled in the summer sun!

Molded Cranberry Salad

Grammy has multiple recipes for Cranberry Jello Mold. When I've posted them all, maybe we'll do a compare and contrast recap.

Molded Cranberry Salad

2 pkgs strawberry jello
3 cups water, hot
5 med oranges, plus orange zest
16 oz cranberries, chopped
2 cups sugar

-prepare the jello per instructions on box.
-mix in other ingredients while water is hot.
-set in mold and cool.

Cider Glazed Sweet Potatoes with Cranberries

We just had something remarkably similar to this at my mother's house over the weekend. Must be a holiday thing!





Cider Glazed Sweet Potatoes with Cranberries

3 1/2 lb sweet potatoes
1 1/2 cup apple juice
1/3 cup brown sugar
5 TB butter
1/2 tsp salt
1/4 ts all spice
1/2 cup dried cranberries
1/8 cup chopped green onions.

-Cook potatoes until half done.
-Add the spices, remaining ingredients, into sauce pan. Cook until the juice is syrup.

Cranberry Nut Loaf

COUNTDOWN TO THANKSGIVING
We're one week out from Turkey Day, which used to be Grammy's main event. You're going to have to figure out how to roast a turkey on your own, because she didn't have a written recipe for that. She must have memorized it.

In the mean time, this would be nice to have on the table.

Cranberry Nut Loaf
2 cups sifted flour
1 cup sugar
1 1/2 ts baking powder
1/2 ts soda
1 ts salt
1/4 cup shortening
3/4 cup orange juice
1 TB grated orange rind
1 egg, beaten
1/2 cup chopped nuts
1 cup fresh cranberries, chopped

-Sift flour, sugar, baking power, soda and salt.
-Cut shortening into mixture until coarse.
-Combine orange juice, egg and grated rind.
-Pour wet mix into dry mix and stir. Add cranberries and nuts.
-Bake at 350 degrees for 1 hour.

Cranberry Sauce for Pork Chops

I made pork chops the other night... wish I'd seen this sauce recipe before hand!

Cranberry Sauce for on Pork Chops

3 TB brown sugar, packed
1 TB cornstarch
1 1/2 cups chicken broth
2 tsp balsamic/red wine vinegar
1/2 cup dried cranberries
1 TB dried sage
1 TB vegetable oil
1/2 ts salt

-simmer ingredients together and stir for 10 minutes.
-to thicken and develop flavors, add thinly sliced shallots or green onion

Cranberry Relish Mold

Pardon the interruption.... It's not an icelandic volcano holding up the posts these days, but instead the lengthy hours I'm working on a film production! These posts will be a little sporadic the next few weeks, but it's summer -- consider it a recipe vacation.

Cranberry Relish Mold

1 ts unflavored gelatin
1 TB cold water
2 pkg cherry gelatin
2 cups boiling water
1 can/16 oz cranberry sauce
1 can crushed pineapple, drained
1/4 cup chopped celery

-Combine unflavored gelatin and cold water, and let stand for one minute.
-Add cherry gelatin and boiling water. Stir until dissolved.
-Stir in the cranberry, pineapple and celery.
-Pour into 6 cup mold coated with non-stick cooking spray. Refrigerate until set.

Cranberry Relish

Not all of the recipes in the box are handwritten. This one comes from a plastic bag of cranberries. I have a vague memory of Cranberry Relish appearing on the Thanksgiving day table, along with the stuff in a can. Enjoy!

Uncooked Cranberry Relish
2 cups cranberries
3/4 cup sugar
1 whole orange

Wash cranberries. Cut orange, remove seeds. Put cranberries and orange through food chopper. Add sugar. Mix thoroughly. Let sit for 30+ minutes.
