New Year's Resolutions

Happy New Year, readers. We're slowing down on postings in 2013 because we don't have as many recipes to publish... but we're still here! The Treat family also paid a visit to Grammy Gertie over the holidays - she's well and says hello!

Here's a recipe that sounds like a healthy New Year's option... until you get to the heavy cream.

Fantastic Spinach Salad
Spinach, torn into small pieces
1 large red apple, peeled and chopped
1/4 cup salted peanuts

Dressing
2 eggs, beaten
1/2 cup sugar
1 tsp brown mustard
1 tsp salt
1 cup heavy cream
1/3 cup white vinegar

-Combine all "Dressing" ingredients and cook slowly over medium heat until it is thickened. Stir Constantly.
-Serve dressing warm over salad ingredients.

Waldorf Salad

Here's another version of the famous Waldorf Salad (a salad so famous, it has its own Wikipedia page), which Grammy adds her own twist: cranberries and pineapple. It's easy enough to make:






Waldorf Salad

apples, cubed
celery, sliced
dried cranberries
pineapple, cut into chunks
walnuts, chopped
mayonnaise

-Mix all of the above!

Jean's Hot Chicken Salad

Just as we thought it was finally warming up, it decided to snow again today. It makes you want to come home, eat/drink something warm, and curl up in bed.

In that spirit, we present this unexpectedly warm recipe. Note that it includes several things you would usually find on Grammy Gertie's lunch table, including the Hellman's and potato chips.






Jean's Hot Chicken Salad
2 cups chicken, cooked and diced
1 cup celery, chopped
1/4 cup almonds, slivered
pinch of salt
2 tsp onions, finely chopped
1 cup Hellmann's
2 TB lemon juice

-Mix all of the above ingredients together.
-Put into a baking dish, and top with:

1/3 cups grated cheddar cheese
crumpled potato chips on top

-Bake at 30 minutes for 350 degrees.
-Recommended serving, pour baked chicken salad over Chinese noodles

green grapes
canned pineapple chunks
mandarin oranges
sour cream

-mix everything together!

Kidney Bean Salad

This may, despite the mayonnaise, be the healthiest recipe that we've found in Grammy's recipe box. It has no oleo, no added sugar, no suet....


Kidney Bean Salad

1 can (16oz) kidney beans, drained
1/2 cup diced celery
1/2 cup sliced olives
1/3 cup sweet pickle relish
1/4 cup mayonnaise
3 TB chili sauce
2 TB green onion, sliced
1/2 tsp salt

-Put all ingredients together and mix!

Frozen Waldorf Salad

Good morning,
I'm fitting in this post between work assignments... as you do. Hope everybody's having a wonderful July so far! Here's something cool to try on a hot summer's day.

Frozen Waldorf Salad

1 can(8oz) crushed pineapple, undrained
2 eggs, beaten
1/2 cup sugar
1/4 cup lemon juice
1/8 ts salt
2 med apples (red delicious), chopped
1/2 cup celery, chopped
1/2 cup pecans, chopped
1 cup whipped cream
lettuce leaves

-Drain pineapple and set juice aside. Add water to juice until it equals 1/2 cup.
-Combine juice, eggs and next 3 ingredients, and cook over medium heat, stirring until thick. Let cool.
-Stir in pineapple, apple, celery and pecans.
-Fold in whipped cream.
-Spread mixture in pan, cover and freeze until firm.
-To serve, let stand at room temperature for 20 minutes. Cut into squares and serve over lettuce lined plates.

Heavenly Frozen Fruit Salad

Heat wave!

We're all suffering temperatures in the upper 90s today, so I wanted to post a cool-sounding recipe.

Heavenly Frozen Fruit Salad

1 ts unflavored gelatin
2 TB lemon juice
3 oz soft cream cheese
1/4 cup mayonnaise
1/4 ts salt
2 TB sugar
1/4 cup quartered maraschino cherries
1lb 4 oz can crushed pineapple, drained
1/2 cup heavy cream, whipped

-Turn refrigerator to coldest setting. (YES!)**
-Sprinkle gelatin over lemon juice. Stir over hot water to dissolve.
-Add combined cream cheese, mayonnaise, salt and sugar.
-Fold in fruit and whipped cream.
-Pour into ice cube tray. Freeze just until firmed.

**alternately, you could just do this in your freezer.

Broccoli & Red Onion Salad

This recipe sounds extremely healthy... until closer inspection!

Broccoli & Red Onion Salad

2 heads broccoli, chopped
1 red onion, sliced
1 lb bacon, cooked-drained-crumbled
1-2 cups cheddar cheese, shredded

-Toss the above ingredients. Dress with the mixture below:

1 cup mayo
1/2 cup sugar
2 TB red wine vinegar

Corn Salad


Good for a picnic (which is many, many months away at this point).

Corn Salad

2 dozen ears of corn
1 good sized cabbage
4 or 5 green/red peppers
2 bunches celery
3 cups sugar
3 pts vinegar
1 pt cooked lima beans

-mix and boil 1/2 hour, stir often

I imagine the yield on this is huge....

New Year Fruit Salad


Wrap up the year with a festive fruit salad! It's a lot of canned fruit, plus sugar, and "1 lb marshmallows", so my nutritionist roommate might not love this one. Whatever, it's New Year's!!


New Year Fruit Salad

1 can peaches
1 can pears
1 can pineapple
1 bottle marachino cherries
1 lb marshmallows
1 pt whipped cream
1/2 lb red grapes
3 oranges
1 can Bing cherries
Bananas if desired

-- Cut up together, mix in whip cream
