Frosting for all your cookie and cake needs!

What's better than 8 minute abs??

Seven Minute Frosting

2 egg whites
1 1/2 cups sugar
"Few grains salt"
1/4 ts cream of tartar
1/3 cup water
1 ts vanilla extract

-Combine the egg whites, sugar, salt , cream of tartar and water, and place over boiling water
-Beat with beater for 7 minutes, until frosting holds shape.
-Mix in vanilla extract

Penuche Frosting

It's the kind of day that requires a quick, sugary pick-me-up. In fact, I just grabbed a bowl of carmel corn to eat while typing. This recipe ought to do it:






Penuche Frosting

1/2 cup butter
1 cup brown sugar
1/4 cup milk
2 cups xxxx sugar

-Melt butter, add brown sugar. Boil for 2 min, stirring constantly.
-Stir in milk and bring to boil.
-Gradually add sugar.
-Beat until spreadable.

Seven Minute Frosting

Emily will love this posting....

I tried once to make homemade frosting without a recipe, and I failed miserably. It came out more like butter. Sugary, sugary butter.

Seven Minute Frosting

3/4 cup granulated sugar
1/2 ts cream of tartar
pinch of salt
2 eggwhites (lg eggs)
1/4 cup cold water
2 ts vanilla extract

-Put all ingredients except vanilla in top of double boiler or heatproof bowl.
-Place over simmering water over low heat.
-Beat rapidly 5 to 7 minutes until stiff peaks form.
-Remove from water and beat in vanilla.
-Cool 1 or 2 minutes, stirring occasionally.

Coffee Breakers

I'm blogging from the office at the moment, and starting to hit that pre-lunch hunger feeling. Needless to say, it would be wonderful if someone put something like this in the break room... all we have in craft services at the moment are those mini cereal boxes, cheetos, and an entire fridge full of Diet Coke. So goes the movie business.

Punuche Fudge

This isn't exactly healthy, but it's delicious... in moderation.

Penuche

2 cups brown sugar
2 TB butter
3/4 cup milk
2/3 cup chopped walnuts

-Combine sugar, milk and butter, and heat until sugar is dissolved (until a little dropped in cold water forms a soft ball - 238 degree F).
-Remove from heat, cool to lukewarm, and beat mixture until it holds shape.
-Stir in walnuts and turn into greased pan/tray.
-Cut into squares when firm.

Mocha Frosting

February... not always an exciting month in New England. It's cold and bleak. What it really needs is a strong dose of sugar and caffeine. For anyone who just gave up sweets for Lent (my roommate), apologies.



Mocha Frosting

2 cups confectionary sugar
2 TB cocoa
dash of vanilla
2 TB oleo -- better change that to butter
2 TB instant coffee
dash of salt

- blend with mixer until frosting-like... I assume.
This is another recipe that Grammy had in her head, and didn't write instructions. Good luck!

Caramel Pecan Sticky Buns

These look delicious!

Caramel-Pecan Sticky Buns

1 pkg active dry yeast
3/4 cup warm water
3/4 cup warm milk
1/4 cup sugar
3 TB vegetable oil
2 ts salt
4 cups all purpose flour (give or take 1/4 cup)

- Dissolve yeast in warm water. Add milk, sugar, oil, salt and 1 1/4 cup flour. Beat on medium until smooth (2-3 min).
- Stir in remaining flour to form soft dough. Knead until smooth and elastic (6-8 min).
-Place dough in greased bowl, flipping once to grease top.
-Cover and let rise in a warm place until doubled in size (1 hr).

FILLING:
1/4 cup butter
1/4 cup sugar
3 ts ground cinnamon
3/4 cup brown sugar, packed
1/2 cup whipping cream
1 cup coarsely chopped pecans

-When dough is ready, roll out flat on lightly floured surface.
-Butter the dough within 1/2 inch of edges.
-Combine sugar and cinnamon and sprinkle over butter.
-Roll up the dough like a jelly roll. Pinch edge to seal. Cut into 12 slices.
-Combine brown sugar and cream, pour onto a greased baking tray. Sprinkle pecans on top.
-Place rolls over pecans. Cover and let rise until doubled in size (1hr).
-Bake at 350 degrees for 30-35 minutes.
-Let the buns cool. Flip upside down to serve.

Butterscotch Candy

Is there anything more nostalgic than homemade candy? You might even need a candy thermometer for this one.

Butterscotch Candy

4 cups sugar
1 cup light corn syrup
1 cup water
1/4 # butter (I think she meant 1/4 cup)

-cover pan. Cook sugar, syrup & water at medium heat (280)
-remove from heat and add butter
-cook at 310
-pour into buttered cookie sheet and let cool until set.
-cut into cubes with buttered knife

Karo Frosting


















And now, for your weekend, something completely unhealthy:

"Karo Frosting

2 egg whites - beaten stiff
add slowly 1 cup Karo (white)
add 1 tsp vanilla
pinch of salt

(be sure + warm Karo a little)"

By the way, I didn't know what Karo was, but have since been told it's a brand of syrup. Happy eating!

Candied Pecans

Even when I get these store-bought, they remind me of Christmas. One year, Grammy showed up with a giant tin of these... it didn't last very long.

Candied Pecans

1 ts cold water
1 egg white
-heat until frothy, then mix well with

1 lb pecan halves
1 cup sugar
1 ts cinnamon
1 ts salt

-Spread on cookie sheet and bake at 225 degrees for 1 hr. Stir occasionally. When done, remove immediately.
