Swiss Steak

I just watched a "Good Eats" episode where Alton Brown covered the regional differences between Swiss Steak and Salisbury Steak, etc. You can watch it here. The intro of the episode made me laugh, especially since we've featured most of those recipes on this blog.

Swiss Steak

1/4 cup flour
1 ts seasoning blend
1/4 ts pepper
1 1/2 lbs round steak, trimmed
1 TB vegetable oil
1 cup chopped celery
1 cup chopped onion
1/2 lb mushrooms, sliced
1 cup water
1 clove garlic, minced
1 TB steak sauce

-Combine flour, seasoning blend and pepper.
-Cut steak into serving size pieces, dredge in flour mixture.
-In a non-stick skillet, brown steak in oil.
-Drain and place steaks in a casserole dish.
-Top with celery, onion and mushrooms.
-Combine water, garlic, and steak sauce. Pour over vegetables.
-Cover and bake at 350 degrees for 90 minutes or until meat is tender.

Kit's Hamburg Stroganoff

Here's another recipe from my Aunt Kit. If it seems like I've been posting a lot of hot recipes recently, the 2 feet of snow outside my window might have something to do with that.

Kit's Hamburg Stroganoff

Cream of Chicken soup
ground beef
1/4 cup onion, chopped
1 clove garlic, chopped
mushrooms, sliced
1 cup sour cream

-Simmer onion and garlic together in fry pan.
-Brown hamburger meat in onion and garlic, then add soup. Simmer.
-Add sliced mushrooms and sour cream.
-Serve over cooked rice.

Muriel's Dinner-In-A-Dish

No idea what magazine this came from, and no idea who Muriel might be... but this recipe reached recipe box card status. Let's give it a go:

Muriel's Dinner-In-A-Dish

6 TB butter
1 med onion, sliced
2 green peppers, sliced thin
1 lb ground beef
1 1/2 ts salt
1/4 ts black pepper
2 eggs, beaten
2 cups corn
4 med tomatoes, sliced
1/2 cup bread crumbs

-Melt 4TB butter in a skillet, saute the onion and green peppers for 5 min.
-Add beef, s&p, and cook on high heat for 3 minutes.
-Remove from heat for 5 min, then mix in eggs.
-In casserole dish, spread 1 cup corn, layer with half the meat mixture, then half the tomatoes.
-Repeat layers of corn, meat, tomatoes.
-Cover with bread crumbs and dot with 2 TB butter.
-Bake at 375 for 1 hour.

Beef Medley Soup

There's supposed to be some huge snowstorm tonight (maybe), so soup seems to be the way to go for dinner:






Beef Medley Soup

1 lb hamburger
1 T oleo*
3 onions, sliced
1/3 cup barley
1 can tomatoes
2 tsp salt
1 tsp pepper
3 carrots, sliced
3 potatoes, diced
3 stalks celery, diced
1 tsp steak sauce

- Put ingredients into pot, add 1 1/2 qt water.
-Bring to boil, then simmer for 90 minutes

*though the original recipe calls for oleo, it should be swapped out for butter.

Beef Medley

There are a few members of our family who no longer eat beef (the consequences of reading "The Omnivore's Dilemma" and/or having a nutritionist for a roommate). However, we did not want to omit any section from the recipe box.


Beef Medley
1 lb ground beef
1 TB margarine
3 onions, sliced
3 stalks celery, sliced
3 carrots, sliced
3 potatoes, diced
1/3 cup med barley
1 can tomatoes
1 tsp salt
1 tsp celery salt
1 tsp steak sauce

Cook meat in margarine for 2-3 min, breaking up with fork. Add onions, barley, tomatoes and both salts, and add 1 1/2 qts water. Bring to boil, cover and simmer 1 hour. Add remaining ingredients and simmer 1 additional hour.

Cocktail Meatballs

Toothpicks, people!

Sauce:
1 large onion - put into blender until fine, fried in 3 TB crisco
(WHOA! how about just "sauteed")
1 large can Italian tomatoes
1 large can tomato puree paste
2 cups water
2 tsp sugar
1 tsp salt
1/4 tsp pepper
1 tsp minced garlic
1/4 tsp each of thyme, marjoram, basil
1/2 tsp oregano
-simmer all of the above together for 4 hours

Cocktail Meatballs:
2lbs ground beef
1/2 cup bread crumbs
1/2 cup parmesan/romano
2 beaten eggs
1/2 cup milk
1 tsp salt
1/4 tsp pepper
1 TB parsley (flakes)

- Mix, make into small balls, and cook for 2 hrs in sauce
