Potato Gratin with Boursin

Potato Gratin with Boursin

2 cups whipping cream
1 5 oz pkg Boursin cheese (w/herbs)
3 lbs red potatoes, scrubbed and thinly sliced
1 1/2 TB chopped parsley
salt and pepper

- Butter 9 x 13 " baking dish.
- Melt together whipping cream and cheese over medium heat.
- Arrange half potatoes in baking dish. Salt and pepper potatoes.
- Pour half cheese mixture over potatoes. Add second potato layer and repeat.
- Bake at 400 degrees for 1 hour, until top is golden brown.
- Sprinkle with fresh chopped parsley.
