Salmon Patties

This isn't a strict recipe so much as the general idea for how to make salmon patties. Then... maybe we grill them? There's a lot of room to tinker with this one.

Salmon Patties
(salmon... canned or otherwise),
add chopped almonds
sour cream
eggs
cracker crumbs

-Mix together and shape into salmon burgers

Coffee Breakers

I'm blogging from the office at the moment, and starting to hit that pre-lunch hunger feeling. Needless to say, it would be wonderful if someone put something like this in the break room... all we have in craft services at the moment are those mini cereal boxes, cheetos, and an entire fridge full of Diet Coke. So goes the movie business.

Blueberry Salad

Grammy has a whole section of her recipe box marked "Salad"... which almost exclusively refers to Jello Salads. Here's a good one for the summer. Note the usage of "canned blueberries".

Blueberry Salad

1 cup coffee cream
1/3 cup sugar
1 pack gelatin
1 tsp vanilla
1 pint sour cream
1/4 cup cold water
1 pack strawberry jello
1 cup boiling water
1 can blueberries with juice

Layer 1
-Heat coffee cream and sugar.
-Dissolve gelatin in cold water.
-Add hot mixture and stir well.
-Remove from heat and add vanilla and sour cream.
-Blend well and pour into square pan. Chill until set, 1 hour.

Layer 2
-Dissolve strawberry jello in boiling water. Add blue berries and juice.
-Pour in pan over cream mixture and chill to set.

Bread and Butter Pickles

I'm not entirely sure why these are called "Bread and Butter Pickles"... that conjures all sorts of weird images.

Bread and Butter Pickles

1 qt cucumbers, sliced
3 or 4 onions, sliced
1 red pepper, sliced

- Soak above ingredients in 1/4 cup salt and water for 3 hours.
- Drain well.

Syrup

pinch of cloves
1/2 tsp mustard seed
1 1/2 cup brown sugar
1 1/2 cup cider vinegar
1 tsp celery seed
1 tsp tumeric

- Bring syrup to a boil.
- Add cucumber mix to syrup.
- Bring slowly back to a boil. Boil for 5 minutes.
- Put in canning jars.

Broccoli Casserole

Mmm... frozen broccoli.
(do they even sell it frozen these days?)

Broccoli Casserole

2 pkgs frozen broccoli
1 cup onion, chopped
2 eggs, slightly beaten
1 can cream of mushroom soup
1 cup cheddar cheese, grated
3/4 cup mayonnaise
1/2 stick butter / margarine

- Cook broccoli half the time of package directions.
- Drain thoroughly.
- Mix all ingredients, including broccoli.
- Sprinkle extra cheese on top.
- Bake at 325 for 45 minutes.

Spare Ribs

There's probably a way to cook this on the grill too, now that it's summer.

Spare Ribs

1 rack baby back ribs, separated
1/3 cup cider vinegar
5 TB sugar
1/4 currant jelly
2 TB chili sauce
1 TB soy sauce
1 TB cornstarch, dissolved in 1/4 cup water
2 TB butter
2 TB brown sugar

-Place ribs in oven proof dish
-Combine next 5 ingredients in sauce pan and cook. Gradually add cornstarch until thick.
-Dot ribs with butter. Sprinkle with brown sugar.
-Pour sauce over ribs.
-Bake at 350 degrees for 1 hour.
