Jean's Punch

I believe this recipe came from Grammy's late friend and neighbor, Jean O'Brien. Seemed appropriate for a Friday. You're gonna need a lot of friends to help you drink this one:




Jean's Punch

3 cans frozen lemonade
2 cans frozen orange/pineapple juice
1 qt ginger ale
1 qt white port wine
1 qt gin and/or vodka

-Mix everything together in a huge punch bowl
-Use an ice float as needed
-Garnish with lime slices and strawberries

Old-Fashioned Creamy Rice Pudding

It's snowing all over New England again today, but this recipe seems simple, cheerful, and warm:

Old-Fashioned Creamy Rice Pudding

1/4 cup short grain rice
1/4 tsp salt
3 TB honey or 1/4 cup sugar
1 qt milk
1 tsp vanilla
1/3 cup raisins (optional)
cinnamon to taste

-Combine rice, salt, honey and milk, put in baking dish. Bake at 325 for 2 1/2 hours. Stir often.
-Add vanilla, raisins, sprinkle with cinnamon. Bake for additional 30 min (no stirring)

Beef Medley

There are a few members of our family who no longer eat beef (the consequences of reading "The Omnivore's Dilemma" and/or having a nutritionist for a roommate). However, we did not want to omit any section from the recipe box.


Beef Medley
1 lb ground beef
1 TB margarine
3 onions, sliced
3 stalks celery, sliced
3 carrots, sliced
3 potatoes, diced
1/3 cup med barley
1 can tomatoes
1 tsp salt
1 tsp celery salt
1 tsp steak sauce

Cook meat in margarine for 2-3 min, breaking up with fork. Add onions, barley, tomatoes and both salts, and add 1 1/2 qts water. Bring to boil, cover and simmer 1 hour. Add remaining ingredients and simmer 1 additional hour.

Spiced Streusel Apple Pie

Happy Monday, let's make a pie!

Spiced Streusel Apple Pie

Topping:
2/3 cup walnuts
1/2 cup brown sugar
1/4 cup cornmeal
1/4 cup flour
3/4 tsp cinnamon
1/2 tsp nutmeg
5 TB butter

Pie:
6 apples, cut up (and peeled)
1/2 cup sour cream
1/4 cup sugar
2 TB flour
1 1/2 tsp cinnamon
3/4 tsp nutmeg
1/4 tsp cloves

- Put the apples in a pie shell, with other "pie" ingredients
- Top with "topping" ingredients
- Bake for 45 min at 425 degrees. **Cover with tin foil for the final 25 minutes**

Banana Bread

I'm actually making this today! Not so much with shortening though...

Banana Bread

1/2 cup shortening
1 cup sugar
2 eggs
pinch of salt
3 very ripe bananas
2 cups flour
1 tsp soda
1/2 tsp baking powder
1/2 cup nuts

-Bake 350 degrees for 50 to 60 min

Jezebel Sauce

I had to do a little research to see what Jezebel Sauce is -- not sure I've ever had it before. According to Google, you can serve this with cheese and crackers, or use it on ham. The recipe is credited to June Rubin.

Jezebel Sauce

1 18oz jar apple jelly
1 18oz jar pineapple preserve
5 oz horeradish
1 oz can dry mustard
2 TB course ground black pepper

-Mix all together & refrigerate

Cocktail Meatballs

Toothpicks, people!

Sauce:
1 large onion - put into blender until fine, fried in 3 TB crisco
(WHOA! how about just "sauteed")
1 large can Italian tomatoes
1 large can tomato puree paste
2 cups water
2 tsp sugar
1 tsp salt
1/4 tsp pepper
1 tsp minced garlic
1/4 tsp each of thyme, marjoram, basil
1/2 tsp oregano
-simmer all of the above together for 4 hours

Cocktail Meatballs:
2lbs ground beef
1/2 cup bread crumbs
1/2 cup parmesan/romano
2 beaten eggs
1/2 cup milk
1 tsp salt
1/4 tsp pepper
1 TB parsley (flakes)

- Mix, make into small balls, and cook for 2 hrs in sauce

Corn Salad


Good for a picnic (which is many, many months away at this point).

Corn Salad

2 dozen ears of corn
1 good sized cabbage
4 or 5 green/red peppers
2 bunches celery
3 cups sugar
3 pts vinegar
1 pt cooked lima beans

-mix and boil 1/2 hour, stir often

I imagine the yield on this is huge....

Butterscotch Candy

Is there anything more nostalgic than homemade candy? You might even need a candy thermometer for this one.

Butterscotch Candy

4 cups sugar
1 cup light corn syrup
1 cup water
1/4 # butter (I think she meant 1/4 cup)

-cover pan. Cook sugar, syrup & water at medium heat (280)
-remove from heat and add butter
-cook at 310
-pour into buttered cookie sheet and let cool until set.
-cut into cubes with buttered knife

Chicken Souffle

This recipe is credited to Margaret Lude:

Chicken Souffle

1 cup chicken, cooked and cut in small pieces
3 slices bread
1/4 cup mayonnaise**
1/2 green pepper
1/2 medium onion
1/2 cup chopped celery
2 eggs
1 1/2 cups milk
1/2 can undiluted cream of mushroom soup
1/4 cup grated sharp cheddar cheese
paprika

-Break 1 1/2 slices of bread into cubes and line (greased) baking dish.
-Mix chicken, onion, celery, pepper, mayonnaise. Places this over bread cubes and top with the other 1 1/2 pieces of bread, cubed.
-Beat eggs, add milk, and pour mixture over bread and chicken mix.
-Refrigerate for 2-3 hours or overnight.
-Bake at 325 degrees for 15 min.
-Remove from over, pour soup over casserole. Top with cheese and paprika.
-Bake 1 hr at 325 degrees.


**Grammy has a strong, Strong preference for Hellmann's!

Karo Frosting


















And now, for your weekend, something completely unhealthy:

"Karo Frosting

2 egg whites - beaten stiff
add slowly 1 cup Karo (white)
add 1 tsp vanilla
pinch of salt

(be sure + warm Karo a little)"

By the way, I didn't know what Karo was, but have since been told it's a brand of syrup. Happy eating!

Fluffy Pineapple Pie

Okay, I'm over the New Year's health food. Time for something fun.

Fluffy Pineapple Pie

2 TB sugar
3 TB flour
dash of salt
2/3 cup syrup from crushed pineapple

- Cook these ingredients until thick, then gradually add:
1 beaten egg
16 marshmallows

- Stir until everything melts. Then add:
1 can crushed pineapple

-Chill for 1 hour, then fold in:
1/2 cup whipped cream

-Pour into baked pie shell. Chill and serve :)

Baked Fish

Happy New Year

I was looking for a healthy recipe to kick off 2010--something that didn't look like Paula Dean attacked with sticks of butter. This seemed simple and appropriate:


"Fish

dipped in milk then into seasoned crumbs.
Into oven 425 degrees for 25-30 min

Haddock fish & others"
